Birthday Breakfast Pan-Cake

Our founder and confectioner, Vedika Bajaj and her daughter Shloka have curated an experiment to convert pancakes into a perfect breakfast cake in the home kitchen.
Added bonus: The Pancakes are eggless!

Your recipe for “Buttermilk Eggless Chocolate Pancakes”

Disclaimer: An apron, a hat and some gloves would be ideal gear to get you ready to whip these delicious pancakes.

Here’s what you’re going to need
with you before you begin:

INGREDIENTS

1 Cup Flour
1 TSP Baking Powder
1/2 TSP Baking Soda
1/4 Cup Castor Sugar
1 Cup Buttermilk
2 TBSP Melted Butter
1 TSP Vanilla Extract
225 gms Dark Chocolate
250 ml Fresh Cream

We’re just 9 steps away to making Aisha’s 21st birthday a whole lot more special than the #21 already is. We highly recommend that you get ready with your ingredients too. Once you see the outcome of this, we don’t want you to feel left out. About 60 minutes to delicious pancakes. Where’s your apron, chef?

Step 1: Mixing all the dry Ingredients
What does our list of dry ingredients consist of?
1 Cup Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
The flour, baking powder and baking soda are to be sieved together into a large bowl. Thereafter, we will add ¼ (a quarter) cup of castor sugar and whisk them together.

Step 2: Mixing the wet ingredients with the dry.
What are the wet ingredients?
1 Cup Buttermilk
2 Tbsp Melted Butter
1 Tsp Vanilla Extract

Step 3: Blend! Blend! Blend!
Our end goal is a smooth batter. We’re going to blend all the wet and dry ingredients that we’ve whisked together into one smooth batter. We know you’re a little exhausted. Guess what? So is the batter. Let the batter rest for 30 minutes. Tick-tock. After 30 minutes have lapsed, your batter is ready!

Step 4: Chef, it is time to showcase your craft.
What you need? A non-stick pan and our beautifully crafted batter. Now chef, over medium heat, drop about ¼ cup of batter into the pan and spread it into a circle. We will allow the pancake to cook on one side for 2-3 minutes on a medium flame. After 2-3 minutes, flip it over. Now, we cook the other side for the same duration (2-3 minutes).

Step 5: Practice makes perfect.
We have to use up all our batter to give us a total of 6-7 medium sized pancakes. Practice and we’re sure you’ll get a hang of it. We hope your breakfast is smelling as delicious as Aisha’s!

Step 6: What’s a cake without chocolate?
Next, it’s time to prepare the chocolate ganache for the cake. In order to make your chocolate ganache, you’re going to need to: Warm 250ml of fresh cream up to 70˚ C. Add 225 gms of dark chocolate callets. Pause - 1 minute rest. Let the mixture of the fresh cream and dark chocolate callets rest for a minute. Phew, it’s exhausting. But, we’re certain it’s going to be worth it.

Step 7: The chocolate ganache
Add 1tsp of butter to your mixture. After the minute’s rest, our chocolate ganache is almost ready. We mix the fresh cream, dark chocolate callets and add 1 tsp of butter to the mixture and mix until we have a smooth chocolate ganache.

Step 8: Stacking them up!
We now layer the pancakes with this drool worthy chocolate ganache. Take pancake #1 - spread the chocolate ganache generously on it, put pancake #2 on top of pancake #1 - generously spread the chocolate ganache. Repeat the process till we have a stack of pancakes with chocolate ganache in between.

Step 9 - Wait a minute, where are the toppings?
Aisha’s cake is almost ready to be served.You have the liberty to dress your pancakes just the way you like them. For Aisha’s cake, we’ve topped it with the Chocolove English brittle for a beautiful nutty, crunchy taste.
